Best Moist and Rich Chocolate Cupcakes! Easy Homemade Recipe From Scratch

This simple recipe will show you how to make the best easy homemade moist chocolate cupcakes from scratch. Get ready to eat rich chocolate cupcakes. This basic recipe uses no buttermilk, but the result is still super soft and delicious!

Today I’m sharing with you my favourite chocolate cupcakes recipe. I’m not even exaggerating when I say these are the softest, richest, MOISTEST (sorry) chocolate cupcakes I’ve ever had. The texture of these cupcakes is like any other I’ve had before. They are moist, very flavourful and chocolatey, and more dense & rich than light and fluffy.

If you’re a lover of chocolate, I can guarantee you’re going to love these cupcakes. They’re not bitter or dark, but not too sweet either, in my opinion.

The best part is that they’re so quick and easy to make.

I’ve been making these cupcakes for a couple of years now, and every time I make them they are gone in a day. They are just so delicious. They just have the best texture. They’re not dry and crumbly like most other cupcakes (which are great in their own way, too.) These ones are like no other I’ve ever had. They are honestly so soft and chocolatey.

I think that if you are an avid baker and chocolate-lover, you MUST try these cupcakes. You will absolutely love them.

Before we get into the recipe, let me just share a few helpful notes:

  • It’s optional, but if you’d like to add some nuts or chocolate chips/chunks, feel free! It’s all about preference. I personally think these cupcakes are decadent enough on their own without the need for anything additional.

  • Make sure your butter is soft and eggs are at room temperature.

  • In my experience, the batter for these cupcakes tends to be a little runnier than other cupcake recipes I’ve tried. Don’t worry though, it works out great.

  • Sieve all your dry ingredients once! I really think this makes a difference in getting you soft and smooth-textured cupcakes with no clumps.

  • Make sure to only whisk/beat the batter as much as necessary to combine the ingredients well. If you over-whisk the batter, you will end up beating too much air into it and the cupcakes will fall flat when they bake.

  • Don’t overfill your cupcake cases. Two-thirds of the way full, as always. These cupcakes don’t rise too much, so don’t worry if they don’t come out with huge domes on top. That’s how they’re supposed to be. And they’re great.

  • Preheat your oven before you start working on the batter. Saves time so that you can eat those delicious cupcakes sooner!

Now let’s get into it.

Yield: 12 cupcakes (could increase if you add any nuts or chocolate chunks in the batter.)

Ingredients:

All-purpose flour (sieved) - 105 grams

Cocoa powder - 30 grams

Caster sugar - 100 grams

Baking powder - 2 teaspoons

Vanilla essence - 1/2 teaspoon

Butter - 40 grams

2 Eggs

Milk - 1/2 cup

Method:

  1. Preheat your oven to 160 degrees Celsius (320 degrees Fahrenheit.)

  2. In a bowl, mix together flour, cocoa powder and baking powder. Set this dry mixture aside.

  3. In another large bowl, mix together softened butter and caster sugar.

  4. To the butter and sugar mixture, add the eggs, one at a time. Then, add vanilla essence.

  5. Now, add the dry flour mixture to this wet mixture, slowly. Add a little at a time and keep whisking.

  6. If it gets too dry to mix, you can start adding the milk as you whisk.

  7. That’s it. Your batter is ready! If you’d like to add any nuts or chocolate pieces, you can do so at this stage.

  8. Now, line your cupcake tin with liners and fill them each two-thirds of the way.

  9. Put the tin into your preheated oven for 15-18 minutes. (You can check when they’re done by inserting a knife or skewer in one of them. If it comes out clean/dry with no wet batter on it, they’re done!)

But, if you want them to look more presentable or wish to pair them with something, I’d recommend some shaved/grated chocolate, or maybe serving them hot with some vanilla ice cream. You could also just spread some Nutella on top and put on some sprinkles, if that’s something you’d like. The possibilities are endless!
